Yesterday we had our usual weekend steak dinner. It is always a nice Saturday meal and we are working to perfect the process.
After finishing my lift, I went upstairs to put the zucchini in both of the air fryers and put together the mashed potatoes. I didn’t start cooking either dish until Kadir had turned on the stovetop to heat up the cast iron for the steak.
We didn’t cut the garlic until the steak was searing on the first side. This was great timing.

Steak Recipe
We used a ribeye steak, a relatively fatty cut weighing ~1.3 lb. You can use any steak for this recipe.
- Thinly slice garlic before cooking the steak.
- Salt steak 30-60 min before cooking to draw out moisture, making for a crisper sear.
- Right before cooking add crushed black pepper.
- Heat cast iron pan to medium high heat until smoking then add generous amount of avocado oil or other high smoke point oil.
- Sear for 6 minutes until golden and dark brown crust forms.
- Take off heat and add ~3-4 tablespoons of butter to melt also causing the pan to cool down.
- Then add the sliced garlic into the butter and put back on medium heat for another 6 minutes.
- Take off heat and let rest and then cut and eat.
Note: Experiment with higher temperatures on the other side of the steak to ensure both sides have a nice sear.
Also, cook garlic for longer until it is slightly crisp.
Squash Recipe
19min at 400 F in the air fryer
My one air fryer cooks a little higher than the other, so one batch is always a bit crispier.
Note: I kept adding more time to the air fryer and it was resting for a minute or two in between so probably try 18 min at 400 next time.
Mashed Potatoes Recipe
I wrote it on the back of the mashed potatoes box, I will add that in here eventually but it serves us pretty well. I only made a slight modification to the recipe adding a bit more fluid and proportionally more milk than water which is opposite of the instructions. Oh, also not as much butter since I enjoy a bit of butter on top instead.
After microwaving the 6 servings for 6 min I stir and then add the crispy bits from the cast iron and chives.
